DIY Dreamy Coco-Milk Pops

These delicious dreamy coconut & lime pops just so happen to be vegan. Not intentionally although it is a bonus, just because I LOVE coconut milk and use it often, so one day when I decided I felt like some home made ice-blocks and had limited pantry ingredients, Coconut Milk was it.

 

Coconut Milk adds such a yummy natural creaminess and sweetness to the pops. They’re free from refined sugar, vegan, gluten free and so refreshing with a heavenly combination of zest, coconut creaminess & just enough sweetness.

Ive also made these pops with some vegan protein added, turning them into a delicious easy way to get a quick protein hit. I highly recommend Prana Organic Power Plant Protein in Coconut Cream or Vanilla Cream flavour. Absolutely the best flavoured and textured vegan protein on the market, and i’ve tried many. As a sweetener I always use either:

RAW HONEY which is unrefined and full of natural antioxidants, enzymes & minerals. This only applies to RAW honey as the nutrients are not damaged by heat. Raw Honey can be found in Organic Stores.

OVER RIPE BANANAS which add extra sweetness, fluffiness and creaminess once blended, as well as being high in potassium and vitamins.

ORGANIC GRADE B MAPLE not to be mistaken with regular supermarket shelf maple, Organic Grade B Maple is very dark in colour and contains 54 minerals. Grade B is superior to Grade A. Organic Grade B Maple can usually be found in Organic Stores/Supermarkets.

 

You can add whatever fruits or flavours you like to this recipe. Blended mangoes in this recipe is divine, and when doing this I remove the maple as I find no additional sweetener is needed. Mangoes + Coconut = Match made in heaven.

 

I hope you enjoy. Have some fun with it adding your own touch. As long as you have a can of coconut cream and some fruits or natural sweetener in your kitchen you’ve always got a solution to those sweet cravings on a hot day.

Ingredients

Pinch of Pink Himalayan Salt

1 Can Full Fat Organic Coconut Milk

 

Zest of 1 Lime

1 tbl Lime juice

1 Vanilla Bean

¼ cup Pure Organic B Grade Maple Syrup

1/2 cup Toasted Coconut Flakes

 

  1. Add coconut milk, himalayan salt, lime zest and lime juice to a small saucepan. Split the vanilla bean lengthwise and scrape out the seeds. Add the seeds and the pod itself to the saucepan. Cook over medium heat, stirring frequently until combined and the mixture is warm (less than 5 mins). Remove from heat, cover and sit for 30 minutes to allow the flavours to infuse.
  2. Pour the mixture through a fine sieve to remove the vanilla bean pod.
  3. Stir the organic maple & toasted coconut flakes into the strained mixture (cooking the maple will kill the minerals).
  4. Pour the mixture into ice pop moulds 3/4 full. Put moulds in freezer minimum 4 hours to till frozen.

 

Thats it. Easy, healthy, full of nutrients, and your kids will love them too!
